In 1115, the Abbey of Clairvaux was founded by Saint Bernard. For Clairvaux to spread economically across the land, Cistercian farms and cellars were established. The farm and cellar of the Cellier aux Moines in Colombé-le-Sec with its vast construction, austere structure and design, elevated ribbed vaults and natural lighting from majestic semicircular windows are perfect examples of Cistercian art. The most remarkable feature, classified a historical monument in 1919, is the medieval cellar. Above it are the living quarters and the flamboyantly decorated chapel- a stunning example of 16th century architecture. Today, this cellar is home to Monial Champagne.
Champagne Communio brut:

Libera Me millésime 2012 : Disgorged in February 2021 after 8 years of aging on slats in our Cistercian cellar, here is the 2012 millésime, fine and sharp, with noble pastry accents.
Champagne Lux Aeterna blanc de blanc:
Simply exceptional, this Chardonnay champagne’s finesse delicately graces the mouth with gentle flowery notes while offering a perfect intensity on a buttery background. From oysters and seafood to treats and bite-sized sweets this champagne will surprise you by accompanying all your meals through all the seasons.
Lux Aeterna Rosé brut:
made essentially from Pinot Noir grapes, this very elegant champagne has delicate notes of red berries and tiny, refreshing bubbles.
Champagne Sylves brut: A lovely balance indeed for this aroma-rich champagne. Sharp to the nose with slightly woody notes. Excellent accompanied with duck and foie gras ballotines, chocolate, nut and pear desserts. Its structure is full bodied and well rounded.
Rouge Cardinal cuvée (red wine): it is a "Coteau champenois" made from 100% Pinot Noir harvested from old vines. It is a light and refreshing wine.
